Barbecue Chicken Pizza

Today I made a barbecue chicken pizza. I saw the recipe in a coupon book. I used Pillsbury regrigerated Thin Crust pizza crust. I would have preferred a whole wheat crust but they did not have any. I would have made my own crust, but I was lazy.

Anyway, back to the pizza. I spread the crust on a baking sheet, added about 1/3 cup of regular barbecue on the bottom. Added chunk chicken breast in the can on top, along with red onions, garlic, and two types of cheese. Pepper jack and monterey jack. Put in a 400 degree F oven for about 10-12 minutes until the crust was golden brown and the cheese was bubbly. I also added a little Mrs. Dash table blend seasoning on it for more added flavor.

I cut the pizza into six slices. I ate two slices. It was very good. The crust was crispy on the edges and chewy in the middle. Perfect. I ate about a half cup of raw baby carrots and a tropical fruit cup with it to round out my lunch.

I would estimate the caloric intake of my entire lunch at around 500 calories. 1 serving of fruit and 2 servings of vegetables (carrots, onions), about 1 1/2 servings of dairy. It would have been better using a whole wheat crust for more fiber (fiber keeps you fuller longer and aids digestion). Can also add more veggies such as broccoli.
